At the top of one of the hills of the Ljutomer Hills, in the heart of Jerusalem, surrounded by vineyards, sweeping views, peace, and quiet, stands an 18th-century building. This year, it was carefully renovated into the Sibon Wine & Spa Resort, a place for rest and relaxation where stories from the past intertwine with modern life.

It consists of the finest cuts of pork, free of bones, skin, and surface fat. Once removed from the brine, it is boiled or roasted and then seasoned. The smoked meat is placed in the tünka—or on a layer of salted pork fat—then another layer of salted pork fat is added on top of the meat, followed by more meat and salted pork fat… As it matures in the salted pork fat, the meat develops a distinctive flavor that is appreciated by both culinary connoisseurs and lovers of good food.
